Tom Brown, GQ Best Chef 2020 and Catey's 2020 Newcomer and Great British Menu Winner 2017, is one of the latest chefs to come out of the county of Cornwall and to contribute to the UK's thriving food scene. Tom is a protégé of acclaimed 2* Cornish chef Nathan Outlaw and he's now known for incredible cooking in his own right, rising through the ranks of some incredible institutions.
Fast forward the last five years after maintaining the Michelin Star for Nathan at his London Restaurant at The Capital hotel, Tom decided to set out on his own, leaving Outlaw's at The Capital to open his own restaurant in Hackney Wick called Cornerstone, which opened in April 2018 and earned a Michelin star two years later.
Tom's latest venture is an Oyster bar called Pearly Queen located in Shoreditch.
Tom prides himself on the brilliance of simplicity and allows natures craft to shine through. His access to the UK's best seafood means that he has a complex understanding of quality, sourcing and freshness and cares deeply about his home county, the terroir, the produce, sustainably, and the environment.
He gives food lovers unsurpassed admittance to the Cornish coast as its salty shores are the driving inspiration behind every plate of food. He is London's craftsman of the sea.
